Beef Kebabs with Spicy Peanut Mayo
Serves 4 ■ Prep time: 5 minutes ■ Cooking time: 10 minutes
Make the peanut mayo as spicy as you like by adding more or less hot sauce.
For this sauce, I like to use a traditional hot sauce that provides heat and a little flavor, not one with lots of other flavors (such as sriracha, which also has garlic
and other seasonings).
1¼ pounds lean steak, such as London broil or sirloin,
cut into 2-inch pieces
⅓ cup light mayonnaise
¼ cup creamy peanut butter
2 teaspoons hot sauce
2 tablespoons chopped fresh cilantro
Coat a stovetop grill pan or griddle with cooking spray and preheat over medium-high heat. Skewer the steak pieces onto metal or wooden skewers (soak wooden skewers in water for 5 minutes before using to prevent burning). Season the steak all over with salt and freshly ground black pepper. Place the steak kebabs on the hot pan and cook for 5 to 7 minutes for medium-rare to medium, turning frequently.
Meanwhile, whisk together the mayonnaise, peanut butter, and hot sauce. Fold in the cilantro and season to taste with salt and freshly ground black pepper. Serve the kebabs with the peanut mayo on the side for dipping.
